As cascas para compota - parti ao meio, tirei a polpa e cortei ao meio novamente, deixando de fora a inserção do cabinho |
As partes com cabinho e machucadas que tirei |
Estas partes foram picadas finamente para fazer geleia |
Faz-se uma trouxinha com sementes e polpa que cozinha junto para incorporar mais pectina |

Pelas fotos e legendas acima, dá pra ter noção da parte que usei para esta geleia. Eram pedaços de cascas mais frágeis, rasgados e aquelas perto do cabinho - tirei esta porção para deixar a compota mais uniforme. Para não descartar, resolvi picar tudo e fazer uma geleia, usando água e um pouco de suco, que é muito ácido. Então a receita ficou assim.
Geleia de laranja amarga com pedacinhos
2 xícaras de casca de laranja amarga (sem a película amarela) picada bem fininho
2 litros de água
3 colheres (sopa) de polpa e sementes da laranja amarga
1 xícara de suco da laranja amarga
2 xícaras de açúcar
Coloque em uma panela as cascas de laranja picadas e 1 litro de água. Deixe ferver por 10 minutos. Escorra a água e acrescente o litro de água fria restante. Coloque junto a polpa e sementes da laranja amarrados numa trouxinha (isto dará um aporte maior de pectina). Deixe cozinhar até a casquinha ficar bem macia - cerca de 30 minutos. Tire a trouxinha, esprema bem, deixando cair o sumo na panela com a casquinha. Junte o suco e o açúcar e deixe cozinhar até formar uma calda grossa e chegar ao ponto de geleia. Distribua a geleia ainda quente em vidros aferventados, escorridos e ainda quentes. Feche, espere esfriar e guarde na geladeira. Ficou uma delícia, só um pouco amarguinha.
Obs. as casquinhas viraram orange pepper ou tempero feito com pimenta, sal etc. Veja próximo post.
