1 xícara de arroz branco cru (se tiver cateto, melhor ainda)
1 litro de leite integral ou leite de coco ou o leite que costuma usar
1/2 xícara de açúcar ou a gosto
Meia amburana ralada ou um sementinhas de baunilha para aromatizar (opcional)
1 xicara de coco ralado fresco
Calda com caju passa
1 xícara de açúcar
1 xícara de água
5 cajus passas cortados em rodelas, deixados em agua morna por meia hora e escorridos
Lave bem o arroz, cubra com o dobro de água e deixe de molho durante a noite ou por até 12 horas. Escorra bem e triture no liquidificador com metade do leite até ficar um creme bem liso. Reserve.
Leve o leite restante com o açúcar e o aroma ao fogo e deixe ferver. Junte a mistura de arroz e, cozinhe, sem parar de mexer, até engrossar. Abaixe o fogo e cozinhe por mais 5 minutos. Junte o coco, misture bem, prove o açúcar e junte mais, se achar necessário. Coloque numa forma de buraco no meio untada com óleo de girassol. Deixe esfriar e leve à geladeira até ficar bem gelado.
Faça a calda: coloque o açúcar numa panela de fundo grosso e deixe caramelizar, mexendo devagar de vez em quando para dourar por igual. Quando estiver caramelizado, junte a água de uma só vez e deixe os torrões de açúcar derreterem. Se for preciso, junte mais água quente enquanto cozinha até que fique com consistência de xarope ralo. Junte o caju, deixe ferver e desligue o fogo, espere esfriar e leve à geladeira para resfriar.
Desenforme o manjar num prato e sirva com a calda. Ambos gelados.
