Fiz este molho para temperar os macarrões de amido de trigo escorregadios que se comem frios com pepino, broto de feijão etc - mas isto é assunto para outro post. Por enquanto deixo aqui a receita do óleo de pimenta que aprendi com uma chinesa no Youtube - veja aqui.
Fiz duas receitas - uma com pimenta calabresa bem fresca, ainda bem vermelha, e outra com flocos de pimenta coreanos usados pra fazer kimchi.
Molho de pimenta à moda chinesa
2 colheres (sopa) de gergelim branco torrado
Meia xícara de pimenta calabresa
1 pitada de sal
1 anis estrelado
1 colher (chá) de pimenta de Sechuan
1 xícara de óleo vegetal neutro (girassol, por exemplo)
1 colher (chá) de vinagre
Numa tigela de inox misture o gergelim, a pimenta calabresa e uma pitada de sal. Reserve. Numa panela coloque o óleo e leve ao fogo para aquecer. Quando estiver quente, junte o anis estrelado e a pimenta. Deixe começar a soltar a fragrância. Espere 2 minutos e despeje sobre a mistura de pimenta calabresa e gergelim. Misture bem e em seguida, com o óleo ainda quente, junte o vinagre. Espere esfriar, coloque em vidro e guarde na geladeira por até 2 meses.
Use em saladas ou qualquer outro prato que peça picância.
