| Os brotinhos aqui só pra fazer uma graça |
No post anterior falei da comestibilidade dos brotinhos de araucária. Veja lá. E aqui digo como os preparei e servi a pequena porção. É difícil colher uma grande quantidade. Por isso, achei melhor usar como um destaque sobre esta pastinha feita com banana verde.
Sei que não é um homus, mas fiz mais ou menos parecido, com a banana verde substituindo o grão de bico. E como não tinha tahini, usei manteiga de amendoim. Usei também iogurte natural e ficou muito bom.
Como fiz:
Pasta de banana verde
Cozinhe bananas verdes bem verdes (de qualquer tipo) em panela de pressão. Assim que a válvula chiar, abaixe o fogo e espere 8 minutos. Espere acabar a pressão e abra a panela. Veja se as cascas estão rachadas. Se sim e se estão bem macias, estão prontas.
Bata com mixer 3 bananas cozidas e frias, sem as cascas, junto com 1 colher de sopa eede manteiga de amendoim ou tahine, meia xícara de iogurte natural, 1 dente de alho picado, 2 colheres (sopa) de azeite e sal a gosto. Se precisar, junte água fria até chegar na consistência de purê. Passe para um prato de servir e sirva com uma cobertura de sementes de girassol tostadas (em um pouco de azeite). brotinhos de araucária cozidos por alguns minutos em água salgada, sementes de romã e azeite a gosto. Sirva com pão, torradas ou como quiser.
